Not only. There is much, much more in pasta. And I’m not talking, of course, about condiments, but about how it is produced. Beyond the raw materials, the strategic choices, the size of the company, there is work based on attention to the smallest nuances. Mix the product in the best way to create a spaghetti, a rigatone, a pen that is of the right thickness, of the most captivating color, with an unmistakable smell. A pasta craftsman is nothing more than a tailor who artfully sews his product, grain after grain, and makes it according to his experiences and not according to market demands. Of course, one must always study and pay attention to the market, its evolution, but the craftsman does not look at the standard, mass demand, rather he focuses on those who want an exclusive product, making strength on the enormous difference that exists between industrial pasta and artisanal pasta. And on this there is an abyss, both on raw materials and on packaging, which then inevitably spills over to the price. But who would not want a Chanel bag over an anonymous handbag, which has a fair, honest and consistent price with the raw materials and workmanship done by hand by expert craftsmen? In the case of pasta, it would not only be beautiful to look at, but also good, not only to taste but also to health. Then, the higher cost becomes completely justified, because there is much more. There is a cure for every grain of pasta that is produced; there is the choice of exclusively Sicilian grains filled with the best natural elements that our soil can provide; there is an ethical attention to the territory; there is an entrepreneur who bets everything he has, especially his credibility, together with his entire family, to offer the best product he can produce. They are mornings, afternoons, evenings and endless nights of sacrifices, thoughts, worries and hard work. But when the scent of pasta floods his entire company, all his worries end.
