The Sicilian Pasta Academy was born to give voice to good Sicilian pasta, the real one. Today, one year after its foundation, Accademia becomes an Association with the aim of protecting the consumer (his health and well-being) with the spread of the Sicilian durum wheat culture and healthy and artisanal pasta making. “There are many topics of interest that we want to develop. Our starting point is the disclosure of Sicilian pasta and, above all, its raw material: wheat. Yes, because Sicilian wheat is the best wheat from an organoleptic point of view and above all from the point of view of yield. Today, with the rediscovery of ancient grains, Sicilian pasta allows the consumer to enjoy pasta without problems of intolerances, improving our well-being at the table, providing important nutritional elements that are excellent for the health of young and old. The smell and the different taste are enough to make us understand that we eat something genuine. Their digestibility is important because the flour obtained from this grain is less refined and has a lower glycemic index. This means that we can preserve our health, slowing down gastric emptying and therefore the speed with which sugars enter the circulation. Indicated in slimming diets, remembering, of course, not to overdo it with seasonings.

Accademia will also take you on an itinerary of Sicilian artisan pasta factories that will introduce us to their processing methods and how they are supplied. Precisely for this reason we have begun to certify the productions with our Accademia brand, as already done for the Pasta Sicilia brand, which naturally has our logo on the back of the label, becoming a Sicilian product certification. This will allow the sale of products directly from the producer to the consumer in the Academy’s e-shop at an affordable price and shipped directly to your home.
