INGREDIENTS
  • Pasta ruote 400 gr
  • Smoked fish 40 cl

  • Milk cream 40 cl

  • Butter50 gr

  • Fresh tuna (no belly) 150 gr
  • Tuna in oil 150 gr

  • White wine 15 cl

  • Chives 1 bunch

  • Leek 50 gr

  • Extra virgin olive oil 30 cl

  • Parsley 1 bunch

  • Green hood 20 gr

  • Salt, pepper to taste

PREPARATION
  • Braise the chopped leek and the julienne cap with the butter and part of the oil, bathing it with the white wine. Once cooked, set it aside.
  • Fry with the oil of the tuna triangles, salt, pepper and set aside with the frying oil.
  • Reduce the tuna in oil in puree.

  • Chop the parsley together with the chives.

  • Combine the smoked fish and the cream in a pan and shrink on the heat, add the tuna, hood and braised mashed potatoes and cook for 5 minutes on low heat.
  • Cook the pasta, add it to the sauce prepared in a pan and sauté it by adding, just before placing it, part of the fried tuna and frying oil.

  • Define the dishes with the remaining fried tuna and sprinkle with the chopped parsley and chives.
